Adrice Spring release 2024

Spring is here and that means that my beloved winemaker and great friends Pam Adkins and Adrice Wines (Julie Bulrice) are having the new release, Spring release 2024. This time the release is coming with 3 gorgeous white (one Viognier for the first time), one of the best rosé I have ever tried made out of Cab Frank, a reserve Cab Sauv and the Fools Gold, a gorgeous Cab Sauv aged in rye whisky barrels and is just a nice different character. Definitely a very enjoyable bunch.

Food wise, I out a bit of my Colombian heritage and brought in a homemade arepa, traditional form my region (Antioquia) and hard to find a nice one around this area. Made the arepa with “carne desmechada”, known from Cuban cuisine as “Ropa Vieja” (pulled beef meat). A great combination bringing my roots to Washington & pairing it with Pam’s gorgeous Can Sauv reserve. Different flavours are always welcome and enjoyable and with this food pairings, I tried to keep that vibe!

Wines & Pairings

Kale & Quinoa Salad

Kale 1/2 lb, Sun dried tomatoes 4 oz

Quinoa 1 lb, Grapefruit (and its zest) 1

Salt & pepper

In a pot boil 3 quarts water and a pinch of salt. When the water boils add the quinoa & cook for about 10 to 15 minutes. Drain it & place on a sheet pan in fridge and let cool. when cooled, mix kale, chilled quinoa, sun dried tomatoes and add grapefruit zest to taste mix through and serve. Serves 6 appetizers.

Roasted corn with homemade Yuca crisp

Sweet corn 1 lb, pineapple chunks 1 lb Yuca root 2 medium size (for the crisps) Red bell pepper 2 medium size, chives

Peel the Yucas with a potato peeler, slice with a mandolin or potato peeler & place sliced Yucas in water to prevent blackening Shallow fry the yucas in vegetable oil until golden brown. In a sautée pan cook the sweet corn until brown and crispy and set aside. On a grill or in a separate pan add pineapple chunks and cook until golden brown set aside. Chop the Red bell peppers & set aside. Chop a quarter of a bunch of chives. Mix grilled corn grilled pineapple red bell pepper and chives season with salt and pepper put in a serving dish. Serve Yuca chips and pineapple salsa. Serves 4

Voyagers Viognier clams

Clams 6 lbs, chilli flakes, garlic 1 clove, Voyagers Viognier 4 oz, parsley, salt & pepper

In a sauté pan add olive oil salt and pepper minced garlic & cook for one or two minutes. Add the clams, fresh or pre-cooked & saute for about three or four minutes. Add approximately 4 ounces of Adrice Voyagers Viognier Wine & cook for three or four more minutes (if using fresh clams cover pan with a lid & let clams open), add chili flakes to taste & garnish with fresh Italian parsley. Serve 4.

Food pairings, wine pairings, moment pairings, pairings. Autumn (or fall like is said in the US) it’s a time that we associate with cold, rain, snow & family or at least get togethers with mates and the sort. This time around, my beloved friends Pam (the winemaker) & Julie (the admin boss) decided to release 4 beautiful wines just on time for the last release of the year. As always, it is a pleasure to play, study & drink Adrice wines. And this time I came up with great pairing ideas for the new babies. I hope you all enjoy my food pairings and Pam’s creations, they never ever disappoint….they always make you fall in love with Adrice.

My mum, Genia (shorter for Eugenia, and you don’t even wanna know how long the name goes for hahahaha) and dad is Sanchez (his name is Raul Jaime, we call him Jaime….or dad), in 2023 they’ve been married for 48 bloody long years, but hey…they still live together, sleep in the same bed and call each other “Mi amor” (My love, for Spanish, colombia, remember?).

My life, our life should I say together with my sister (Cathalina or Cathy, don’t ask about the H in a Spanish name), has been a privileged one, we had everything we needed and sometimes more, thanks to our parents, to my dad’s hard work & discipline & my mum’s great support.

Our family has somehow worked out. I think I’ve made it a long way and still building up & so has my sister, a little older than me but still cool and with her life coming to her and making what makes her happy, making her career an enjoyable one. She’s a lawyer and has specialized in human rights & migrations.

But let’s just focus on “The sponsors”. This is just a little post to honour this two people, that today, together with Cielo & Bianca (the pups, you’ll read about how they influence in me later) & my sister (and the incognito) form my direct family. Some people say that family it’s all you have at the end.

Those two guys, Genia & Sanchez, bloody hell, I don’t have enough time in my life and enough space in my blog to write about them, about how good, supportive and emotional support they’ve been all my life, not only with my “Good Samaritan” education but also that support we all need sometimes when our business or our personal lives aren’t rolling that smooth, they’ve always been there. I thank god (I don’t care who you thank to, we’re all good) for them and for that, counting on your parents after all these many years & mishaps & successes, it’s just a big deal.

Today, as I’m sipping down on some Oregon dolcetto from Marchesi & some cab sauv from Kennedy Shah, organizing and trying to make this blog more fancy and nice and up to date, decided to write about a big part of my success, my parents!

Long story short, my dad prefers his steak Medium to well, really dad? Oh god….and by the way, when I had my resto, la Galite, in colombia, I wouldn’t serve “chips”, in American “French fries” , but that’s like my dads second most loved snack…. Guess how many we had do cook because “El señor Sanchez” ordered then and the table next to them also wanted them….they just didn’t understand who that guy was, the guy behind the scenes. Restaurant life, right?

Today, after many hard & good times, after many learnings, after understanding his say “You build your own future”, I can’t be more proud of saying they’re my parents, I can’t think of choosing a different pair, I’m just extremely grateful and blessed for having those 2 human beings as my parents, my supporters, my cheerleaders, my backing many times and for just being my parents and to try to teach me and show me the right way to things & the right way of operating in life.

Thank you, gracias! Those are the words for my folks, they deserve way more than that, I know, but writing some words… it’s just a start!

Adrice Wines Summer Release 2023

For this summer release, Winemaker Pam Adkins does it again with her craft, her knowledge and ability to transform a little grape into this amazing wines we’re releasing. Varietals, blends and the always divine Vaqueras (Cowgirls) a beautiful dessert wine aged in rye whiskey barrels (American oak), pretty rare in the Washington wine market and one of my favorites from Adrice’s multiple price awarded line up! And for me, the Chef, a complete privilege to play with those awesome flavours and textures coming out of the bottle to imagine and create the perfect food pairing for each of the wines. Was a pleasure creating this pairings once again and will always be!
